Frivolous Friday: Things are lookin’ just peachy….and apple-y!

It’s Frivolous Friday!

Thought I would share some of the fun I squeezed in this week (in between all my portrait sessions and retouching work.)

Yep, this happened #1:

Did you know the hubs and I like to garden?  Not CRAZY garden, but light garden….lol.  We have some fruit trees  (Peach, Apple, Pear, Lemon and Avocado) and love

having beautiful flowers everywhere.  This year – since I’m returning to my Pioneer Woman roots during quarantine, I added some sunflowers and a vegetable garden (tomatoes, squash and peppers.)

Our peach crop just finished and we ate our way through a whole month of juicy goodness – plus I made froze enough sliced peaches for two pies in the future.  YUM!

And as a side note, the aroma of peaches is just about my favorite smell in the world –  it’s definitely the heavenly scent of summer to me!

This year, I also tried homemade Peach Preserves. I found an easy recipe for Freezer Jam.

Freezer Jam is prepared without heat and without all the hassles of canning and sterilizing with high temperatures -you just mix it up, put it in jars and freeze until you are ready to use.

It has an amazing fresh taste!

Oh…and I’ll just mention that harvest time is the BEST time of year for the poodles – they can grab a peach or an apple whenever they want!

But the especially on my mind this week is my apple tree!

**Usually apples are ripe in the autumn – but my tree is kinda like me in that it’s always early for appointments.

So it always fruits in the middle of the summer.   And that’s fine with me!

This year it was a BUMPER crop with probably 200 apples!  YUM!

Well one of the problems of that many apples is that some are two stories high in the tree – so we had to get creative – like picking apples from our bedroom window!

And I just have to show you the biggest apple we’ve ever seen – 9″ in diameter!!!  Whoa!

Well, of course I had to use those apples – so I tied on my pioneer woman apron and made FOUR kinds of apple deliciousness.

First up was applesauce and apple butter in my instant pot.

(Turns out apple sauce and apple butter start out the same way – so I combo’d them in the beginning!)

And the recipe I found says to keep the peel on – so it was super easy to make.  (Let me know if you want the recipe)

Add some brown sugar and cinnamon and wa-LAAAA they are delicious!  (Please note the custom jar labels….you know I’m all about details!)  😉

(Side note, I served some of my apple sauce warm over pork tenderloin and it was perfection – so got a dinner out of it too.)

I also found a great recipe for dehydrated apple rings – made in your oven.  These were super easy and so yummy – I will definitely be making more of these.

And lastly, made an apple cake with cream cheese frosting!  Oh my it was good.

(Of course I will eat a shoe if you slather it with cream cheese frosting….just sayin’….anyone else?)

 

What can I say:  I’m Feeling Blessed!
